Chawanmushi, Japanese savory custard

Chawanmushi, flan salé japonais

Ingredients

  • 2 eggs
  • 2 tablespoons of liquid dashi
  • 300ml of water
  • 1 teaspoon of soy sauce
  • Toppings like shiitake mushrooms, shrimp, chicken, etc. (optional)

Preparation


1.
In a bowl, crack the eggs and beat them lightly. Add the liquid dashi, water, and soy sauce and mix.

Pass the mixture through a fine sieve to obtain a smooth texture.

Pour the strained egg mixture into ramekins and add the toppings.

In a large saucepan, add about 1/3 of water and place the ramekins covered with aluminum foil or a lid. Then cover the pan and cook over high heat for 7 minutes.

5.
Reduce heat and cook for another 3 minutes.

At the end of cooking, you should have a firm, but still slightly wobbly chawanmushi.
