Sea bream donburi in ochazuké

Donburi de daurade en ochazuké

Ingredients

  • 150g cooked rice (rice cooking time is not included in this recipe)
  • 1 boneless sea bream fillet
  • 1 tablespoon of soy sauce
  • 1 tablespoon of mirin
  • 1 tablespoon of sake
  • 2 tablespoons ground white sesame seeds
  • Kizami nori
  • Herbs of your choice: shiso, spring onion, chives etc.
For the ochazuke version as a final touch
  • 1 sachet of dashi broth + 500 ml of water
  • Wasabi (optional)
  • Puffed brown rice (optional)

Preparation

In a heat-resistant bowl, pour the mirin and sake. Heat in the microwave at 600W for 30 seconds. (This step is to evaporate the alcohol; it is also possible to heat in a saucepan.) Then add the soy sauce and ground white sesame seeds, mix well, and let cool.

Slice the sea bream 1 cm thick then mix the slices with the marinade.

Place the hot rice in a donburi bowl and arrange the marinated sea bream slices.

4.
Add the kizami nori and herbs of your choice. The donburi is ready to eat.

5.
To enjoy it ochazuke style, pour the hot dashi broth into the donburi, add toppings such as wasabi or puffed brown rice and enjoy.
