Matcha green tea ice cream

Glace au thé vert matcha

Ingredients

  • 25g of premium matcha
  • 40 cl of liquid cream
  • 80 g caster sugar
  • 25 cl of milk
  • 4 egg yolks

Preparation


1.
Mix the egg yolks with the sugar. Add the milk and single cream. Heat over low heat until the mixture thickens and coats the spoon. Turn off the heat immediately.

2.Allow the mixture to cool slightly before stirring in the matcha green tea powder to preserve its color and benefits. Carefully sift the matcha into the cream.

3.Stir the mixture into an ice cream maker for 30 minutes (depending on the appliance), just before serving.
