1.In a bowl, beat the eggs and add the liquid dashi and water. Mix until well combined.
2.Heat a non-stick pan and add a little vegetable oil.
3.Pour a small amount of the egg mixture into the hot pan. When the edges begin to cook, roll the omelet forward.
4.Add a little more oil if necessary and pour a small amount of the egg mixture back into the pan. Lift the rolled omelet and let the liquid egg flow underneath. Roll it up again.
5.Repeat until the omelet is fully cooked.
If you prefer a slightly sweet omelet, add a tablespoon of sugar to your preparation.
