Description : Nukadoko is a Japanese mixture containing rice bran, salt, kombu seaweed and red pepper. It is used to ferment Japanese vegetables, called tsukemono. This nukadoko refill contains only rice bran. It must be combined with the Organic nukadoko - rice bran for Tsukemono 1kg (ISHIKAWA02)

Use : The nukadoko refill is used to maintain your nukadoko mixture, if it has increased in water content, decreased in volume, or lost its flavor. Add a little salt to the refill (1 part salt to 10 parts rice bran) and then add to your nukadoko. Mix well before levelling the surface. Leave to stand at room temperature for three days, without stirring. On the fourth day, stir the mixture well to allow air to penetrate. The surface may be covered with white yeast, which should also be stirred. Once the mixture no longer has a strong smell, nukadoko is ready for use.

Preservation : Keep at room temperature, away from sunlight, heat, and moisture. Remove oxygen scavenger before use. Once opened, keep refrigerated. Remove oxygen scavenger before use.
