Tsukune Chicken Skewers

Brochettes de poulet Tsukune

For the skewers

  • 400g minced chicken
  • 1 small piece of ginger
  • 1 egg
  • 1 chopped spring onion
  • 4 to 6 tablespoons of panko
  • 1 tablespoon of soy sauce
  • 1 tablespoon of Hon mirin
  • chopped shiso leaves
  • salt
  • pepper
  • sesame oil

Sauce for skewers

  • 2 tablespoons of soy sauce
  • 2 tablespoons of sake
  • 2 tablespoons of Hon mirin
  • 1 tablespoon of sugar

Preparation


1.
In a salad bowl, mix all the ingredients, except those for the sauce.

Shape into balls. You can use oil to help prevent the balls from sticking.

In a hot pan, cook the skewers with a little sesame oil.


4.
In a bowl, mix the sauce ingredients: soy sauce, sake, hon mirin and sugar.


5.
At the end of cooking, pour the sauce over the skewers to caramelize them. Sprinkle with a little chopped shiso leaf.
