Strawberry and matcha number cake
Ingredients for 8 people
For the matcha sponge cake
5 eggs
150 g of sugar
150 g rice flour
3 teaspoons of matcha tea
40 g butter
For the mascarpone cream
500g of very cold whipping cream or crème fraîche with a minimum fat content of 30%
150 g of mascarpone
30 g of sugar
1 punnet of strawberries
Preparation
1.Preheat your oven to 180°C.
2.Separate the egg whites from the yolks. In a bowl, combine the egg yolks with the sugar. Beat the egg whites until stiff and add them to the mixture. Sift the flour and add it to the mixture. Finally, add the melted butter and mix well.
3.Pour the mixture into a previously buttered sponge cake mold and bake for 20 minutes.
4.Once the sponge cake is cooked, let it cool on a wire rack.
5.Prepare the mascarpone cream: Whisk the cold whipping cream with the mascarpone and sugar. Prepare your strawberries by washing and cutting them.
6.Cut the sponge cake into the numbers of your choice. Then cut each number in half, lengthwise, so that you have a top and bottom part.
7.On each bottom part, pipe the cream using a piping bag, along with the strawberry pieces. Cover with the other part of the matcha sponge cake and decorate in the same way.
