Salmon tataki with Ponzu

Tataki de saumon au Ponzu

Ingredients

  • 160 g fresh salmon (for sashimi, in pieces)
  • Chives (sufficient quantity)
  • Sesame oil (for cooking)
  • 2 tablespoons of ponzu
  • Tororo kombu (optional)
  • Salmon eggs (optional)


Preparation


1.
Heat a little sesame oil in a pan.

Cook the salmon until the surface changes color (about 2 mm deep) to brown it lightly.

3.
Let the salmon cool in the refrigerator for about 20 minutes.

4.
Once cooled, cut the salmon into slices about 1 cm thick.

5.
Arrange the salmon slices on a platter and sprinkle with chives, tororo, and salmon roe.

6.
Pour the ponzu sauce over everything.
