Warabi Mochi

Ingredients

  • 60 g of warabimochiko
  • 240 ml of lukewarm water
  • 50 g of sugar
  • About 30g of kinako
  • Optional: For the black sugar syrup: black sugar + water

Preparation


1.
In a saucepan, mix the warabimochiko flour with the warm water until smooth and lump-free. Add the sugar and stir to dissolve.

Heat over low heat, stirring with a wooden spatula until the mixture becomes translucent.

Using a wet spoon, form into pieces. Let cool in water, drain, then sprinkle with kinako.


4.
For the dark sugar syrup: Add equal amounts of dark sugar and water to a saucepan and heat until syrupy. (Crush the sugar if it is in lumps!


Trick :
Rather than forming the pieces with a spoon, you can pour the dough into a slightly dampened dish, let it cool, then cut it with a wet knife before coating it with kinako.
