Yuzu shio Ramen

Ingredients

  • Wheat Ramen Noodles "Omoide"

For the broth

  • 400ml of water
  • 1 sachet of dashi (Bonita or vegan)
  • 1 1/2 tablespoons of concentrated liquid dashi (bonito or vegetarian)
  • 1 teaspoon of mirin
  • 1 teaspoon of fleur de sel
  • 1 teaspoon of sesame oil
  • A little grated ginger
  • A little grated garlic

Seasonings

  • A little yuzu kosho
  • A few drops of yuzu juice


Toppings (your choice)

  • Shio Koji Chicken (recipe below)
  • Ajitama - Pickled Eggs in Tsuyu Sauce (recipe below)
  • Chives
  • Fresh yuzu
  • Sesame

Ajitama - Pickled Eggs in Tsuyu Sauce

  • Eggs (as many as desired)
  • Tsuyu sauce (1 tablespoon per egg)

Shio Koji Chicken

  • 1 chicken fillet (approximately 350g)
  • 2 tablespoons liquid Shio Koji

Preparation

Prepare two pots: one for cooking the noodles and one for the broth.
2.In the stock pot, pour 400 ml of water and one sachet of dashi. Bring to a boil over medium heat, then stir in all the other ingredients for the stock.
3.In the other pot, cook the noodles according to the package directions.
4.Taste the broth prepared in the pot: if it is too thin, add a little salt or liquid dashi; if it is too strong, dilute it with water. Just before the noodles are ready, pour the broth into the bowl.
5.Add the cooked noodles, add the toppings of your choice (marinated egg, shio koji chicken, etc.) to complete your ramen to your taste!


Ajitama - Pickled Eggs in Tsuyu Sauce

1.
Boil water in a saucepan.
2.When the water boils, add the eggs and cook them over medium heat for about 7 minutes.
3.Once the eggs are cooked, immediately place the pan in cold water to cool them.
4.Then peel your eggs and place them in a plastic bag.
5.Add the tsuyu sauce to the bag, then seal the bag, removing the air, and place it in a small bowl. Let them marinate in the refrigerator for 2 hours.
6.To ensure even marinating, turn the eggs in the bag occasionally.
7.After marinating, the eggs will have a beautiful color and delicious taste. Now you can add them to the ramen!


Shio Koji Chicken

1.
Place the chicken fillet in a plastic bag and add the Shio Koji. Massage the chicken well to ensure the marinade is evenly distributed.
2. Marinate the chicken in the refrigerator for 3 hours (or up to overnight) to allow the flavors to penetrate the meat.
3.In a saucepan, add enough water to cover the chicken. Add the marinated chicken breast. As soon as the water starts to boil again, turn off the heat.
4.Cover the pot and let the chicken sit in the hot water until it cools, this helps the chicken stay tender and juicy.
5.Once the chicken has cooled, you can slice it thinly and add it to the ramen. If you're not eating it right away, you can store it in the refrigerator in the cooking water to keep it juicy and fresh.
