Yuzu Shio Ramen 

Ingredients (for 1 person)

Noodles

For the broth 

  • 400ml water
  • 1 sachet dashi (Bonito or vegetarian)
  • 1 and a half tablespoons concentrated liquid dashi (Bonito or vegetarian)
  • 1 teaspoon mirin
  • 1 teaspoon fleur de sel
  • 1 teaspoon  sesame oil
  • A little grated ginger
  • A little grated garlic

Seasonings


Toppings (your choice)

  • Shio Koji chicken (recipe below)
  • Ajitama - Eggs marinated in Tsuyu sauce (recipe below)
  • Chives
  • Fresh yuzu
  • Sesame 

Preparation


1. Prepare two pots: one for cooking the noodles and one for the broth.
2. Pour 400 ml water and a sachet of dashi into the broth pot. Bring to the boil over medium heat, then add all the other broth ingredients.
3. In the other pan, cook the noodles according to package instructions.
4. Taste the broth: if it's too light, add a little salt or liquid dashi; if it's too strong, dilute it with water. Just before the noodles are ready, pour the broth into the bowl.
5. Add the cooked noodles and the toppings of your choice (marinated egg, shio koji chicken...) to complete your ramen to your taste!

Ajitama - Marinated eggs with Tsuyu sauce

Ingredients

  • Eggs (as many as desired)
  • Tsuyu sauce (1 tablespoon per egg)

Preparation


1. Bring water to the boil in a pot.
2. When the water boils, add the eggs and cook over medium heat for about 7 minutes.
3. Once the eggs are cooked, immediately place the pot in cold water to cool.
4. Peel the eggs and place them in a plastic bag.
5. Add the tsuyu sauce to the bag, then seal the bag by removing the air and place in a small bowl. Leave to marinate in the fridge for 2 hours.
6. To ensure even marinating, turn the eggs in the bag from time to time.
7. After marinating, the eggs will have a beautiful color and a delicious taste. Now you can add them to the ramen!

Shio Koji chicken

Ingrédients (pour 2 personnes)

Preparation


1. Place the chicken breast in a plastic bag and add the Shio Koji. Massage the chicken well to distribute the marinade evenly.
2. Marinate the chicken in the refrigerator for 3 hours (or up to overnight) to allow the flavors to penetrate the meat.
3. In a pot, add enough water to cover the chicken. Add the marinated chicken breast. As soon as the water starts to boil again, turn off the heat.
4. Cover the pot and leave the chicken to rest in the hot water until it cools down, to keep it tender and juicy.
5. When the chicken has cooled, you can slice it thinly and add it to the ramen. If you don't want to eat it immediately, you can store it in the refrigerator in the cooking water to keep it juicy and fresh.
