Ingredients

  • 100 g of Somen
  • 15 ml of tsuyu sauce
  • 30 ml of water

Toppings

  • White sesame seeds
  • Kizami nori
  • Umeboshi (Japanese plum)
  • Yuzu kosho
  • Grated fresh ginger
  • Shiso
  • Chives/Scallions

Preparation


1.
Bring a large quantity of water to a boil, add the somen and cook for 1.5 to 2 minutes.

Once cooked, drain the noodles then rinse them immediately under cold water.

Dilute the tsuyu sauce with water (2:1), then place it in small bowls. You can let it sit in the refrigerator to keep it chilled.

4.
Arrange the somen on plates or bowls and serve with tsuyu sauce. Add the toppings directly to the tsuyu; they will flavor the broth and enhance each bite! Dip the noodles in the chilled tsuyu before enjoying.
