Gluten-free curry with Japanese res kuri squash croquettes

Ingredients for 4 people

  • Rice : 2 measures of Koshihikari Japanese rice. In this recipe, 1 measure of rice is equivalent of 160g of rice.
  • Gluten-free curry with vegetables : 1 onion, 3 potatoes,  1 ou 2 carrots, some chive and 150g of gluten-free Japanese mild curry with no allergen
  • Red kuri squash croquettes au : 1 quarter of red kuri squash, 1 onion, 100g of panko, some rice flour komeko, 1 egg, some cooking oil, salt and pepper.


1. For the rice : Rinse the rice several times by rubbing it between your hands until the water runs clear, then drain it. Pour the rice into your rice cooker or a saucepan and add 2.3 volumes of water to 2 volumes of dry rice. Leave the rice in the water for 15 to 30 minutes. Finally start cooking the rice.

2. For the gluten-free curry with vegetables : Cut the potatoes and carrots into small cubes. Chop the onion and cook it in a pan with a little oil. Then add the rest of the vegetables, cook them for a few minutes over high heat and then pour in water to cover everything. Cook over low heat for about twenty minutes. Add the curry powder, mix it well and leave on the heat for 5 min. Put the curry aside. 

3. The red kuri squash croquettes : Cut the red kuri squash quarter into pieces and remove the skin. Boil some salted water and cook the red kuri squash for 20 minutes. Meanwhile, prepare a plate with flour, another one with the beaten egg and one with the panko. Cut the onion into small pieces and cook it in a pan with a little oil, until it becomes translucent. Once the squash is cooked, mash it in a bowl and add the onion. Mix everything together and season with salt and pepper. You can add a little flour to prevent from sticking. Make small balls and roll them in the flour, then in the egg and finally in the panko. Heat oil in a frying pan. Once the oil is hot, fry the croquettes 3-4 min on each side until they are golden brown.

4. The presentation: In a deep plate, prepare a portion of rice, add a few ladles of curry and arrange the pumpkin croquettes on top. Sprinkle some chopped chives on top. It's ready !
