TSUKUDANI

"Tsukudani" initially refers to a cooking method and shifted to referring to the condiments obtained from this cooking method. Traditionally, fresh aliments, usually sea foods such as seaweeds or tiny fishes, are slowly simmered in a mix of soy sauce and sugar to which mirin or sake is often added. This cooking method was used to preserve fresh ingredients in times of shortage.
