Description : Called «sea grappes», umi budo are seaweed cultivated in the sunny islands of Okinawa. They are also known as the « green caviar» because they have the particularity to burst when chewed like the caviar. 

Flavor : Fresh and iodic. 

Use : You can enjoy umi budo like it is with just a little bit of vinegar or soy sauce, as an appetizer with a beer for example. You can add them to your sauces to bring them a iodic fresh taste. They are delicious on top of rice or with bread and butter. They also match very well with seafood and enhance their taste. 

Instructions : Rinse carefully the grappes befor eating them and put it few minutes in a bowl of water. If the grains have lost their firmness put them 2-3min in freshwater in order to give them back their consistence, then consume within three days.

Ingredients : Caulerpa lentillifera (40g), Salt (23-25% of saline concentration)  

Preservation : Between 20 et 23°C to preserve the firmness of the umi budo.

Specialized in growing umi budo seaweed and making products out of it, the company attaches importance to research. Part of the company’s office is dedicated to research on growing umibudo, research that led to the development of a variety of products made from this seaweed in an ideal environment. Nihon Biontech is an important actor of the city they are located in, Itoman, thanks to the various activities they offer. Indeed, people can discover the area and umi budo through workshops, camp on the company’ site or stay in the guest house set in the office.

Une texture très proche des œufs de poissons :craquant et aqueux. Un gout iodé prononcé. Je les ai trouvés délicieux. Je recommande pour ceux qui aiment les produits de la mer!

Bien rincer a l’eau très légèrement tiède sinon ça sera trop salé. Parfait avec une bière IPA ou Pale Ale.
