Matcha and black sesame rolls

Ingredients for 14 rolls

For the matcha dough
  • 510g of all-purpose-flour T45
  • 80g of granulated sugar
  • 1 pinch of salt
  • 125g of whole milk
  • 4 tablespoon of organic superior matcha
  • 10g of instant or rapide rise yeast
  • 2 eggs 
  • 1 egg yolk 
  • 100g of butter

For the black sesame paste

Preparation

1. If you use dried yeast, rehydrate it first. Put all the ingredients except the butter in the pastry robot bowl : add sugar, whole milk, eggs, the organic matcha powder, all-purpose-flour and finally one pinch of salt. Use the dough hook for 4 min at speed 1, then for 7 min at speed 2. Add the butter, and knead it again with the dough hook for 4 min at speed 1, then for 7 min at speed 2. The dough has now an elastic texture, so roll it. Let the dough rest for 2 hours at 25°C. It will double in size. If you don't have a pastry robot, you can use your hands and your elbows grease !

2. For the black sesame paste: Mix all the ingredients in the bowl, using the flat stirrer, until it is well mixed. Put to one side. 

3. Put some pressure to chase the air out of the dough. Add some flour on the kitchen table and roll the dough out to form a rectangle. 

4. Spread the black sesame paste on the dough. Make sure to place the rectangle in front of you like a paper sheet. Fold the upper and lower parts to the center in order to have a little rectangle. Fold again the dough from left to right. Then roll out the dough again. Be careful to keep the paste inside.

5. Cut the dough into thin slices. You can put the dough in the refrigerator if needed. Twist the thin slices and roll it like a snail or just like a bretzel. Let the matcha and black sesame rolls dough rest for 2 more hours. You can leave the rolls in the refrigerator overnight covered with a clean dish towel. 

6. Brush the rolls with egg yolk or a little milk.

7. For the cooking : Cook in the oven at 160°C for 26 min. Leave some space between each rolls.
