Yuzu and black sesame mochi donuts

Instructions

1. Preheat the oven to 180°C and lightly grease a donut mold. In a large bowl, mix together the mochiko flour, the sugar, the baking powder, and the salt.

2. In another bowl, beat the eggs, milk, vegetable oil, yuzu juice and candied yuzu peels. Pour the liquid mixture into the bowl of dry ingredients and mix until you have a smooth and homogeneous batter.

3. Fill the donut molds about 3/4 full with the batter. Bake the donuts for approximately 12 to 15 minutes, or until they are lightly golden and firm to the touch.

4. Meanwhile, prepare the black sesame glaze. In a bowl, mix together the powdered sugar, the black sesame paste, the milk and the charcoal powder until you have a smooth and thick glaze.

5. Let the donuts cool before removing them from the mold. Then, dip them into the black sesame glaze, coating them completely. Sprinkle additional black sesame seeds and candied yuzu peels on top of the donuts.

6. Let the donuts rest for a few minutes for the glaze to slightly harden.
