White cabbage and carrots gratin, with soy milk béchamel sauce

Ingredients (4 portions)

  • 1 white cabbage
  • 2 carrots
  • 50 g grated cheese (emmental or comté)
  • 40 g of butter
  • 40 cl of soy milk
  • 2 tablespoons of all-purpose flour
  • Salt, pepper
  • 1 teaspoon of nutmeg

Instructions

1. Pre-heat the oven at 200 °C using the grill option. 

2. Start to prepare the béchamel sauce : in a saucepan, let melt the butter, then add in one time the flour then keep stirring. Add slowly the soy milk while continuing stirring. Heat on low fire until the sauce thickens. Add the nutmeg, then the salt and pepper. Keep aside.

3. Wash the white cabbage and cut it into pieces. Once the carrots are peeled, cut them into small pieces. In a saucepan, cook the vegetables in hot and salted water during 15 minutes. 

4. Butter the bottom of a dish. Drain the vegetables and place them in the gratin dish. Cover with béchamel sauce and sprinkle with cheese. Bake the gratin at 200 °C for around 20 minutes until it gets brown.

You can also add meat such as little pieces of bacon or chicken breast, and serve the gratin with salad.
