Tantan Ramen 

Ingredients for 4 people

Preparation

1. Boil a large pot of water to the boil. Separate the pak choi leaves and wash them, along with the mung bean sprouts.

2. Cook the pak choi in the boiling water for six minutes. Remove from water and set aside.

3. Blanch the mung bean sprouts in boiling water for three minutes. Remove from the water and set aside.

4. Cook the eggs for six minutes. Then, plunge them into cold water to stop the cooking, before peeling and setting aside. You can prepare marinated eggs niitamago if you wish. 

5. Stir grounded meat in a pan with sesame oil, and season with black garlic soy sauce, sugar, sake, and miso. Set aside.

6. Chop the spring onions. Mix sesame paste, soy sauce, vinegar, ra-yu and sesame oil.

7. Prepare the chicken stock and add soy milk. Let boil and add to the previous mixture with the sesame paste.

8. Cook the noodles according to the package instructions.

9. Arrange the noodles in a bowl, pour the broth over them and garnish with the grounded meat, pak choi, mung bean sprouts and halved eggs. Add a few drops of ra-yu.
