Daifuku mochi à la fraisemochi au matcha et à la fraise

Sobacha pudding with its golden sesame sauce

Ingredients for 8 servings:

For the pudding

  • 4 eggs
  • 500 ml of whole milk
  • 100 g of sugar
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of crushed sobacha

For the golden sesame sauce

Instructions

1. Preheat your oven to 180 °C (350°F).

2. Heat the milk in a saucepan over medium heat until warm but not boiling. Add the sobacha to the warm milk and let it infuse for about 20 minutes. Then, strain the milk to remove the sobacha grains and reserve the infused milk.

3. In a large bowl, beat the eggs with the sugar and vanilla extract until homogeneous. Gently incorporate the infused sobacha milk into the egg mixture until well combined.

4. Pour the flan mixture into a buttered or greased cake pan.

5. Place the cake pan in a larger ovenproof dish and fill it halfway with hot water for a water bath. Bake in the preheated oven for about 45 to 50 minutes, or until the pudding is set and golden on top.

6. While the pudding is baking, prepare the golden sesame sauce : in a small saucepan, mix the golden sesame paste, sugar, and water. Heat over low heat, stirring constantly, until the sugar is dissolved, and the mixture is smooth and slightly thickened. Remove from heat and let it cool.

7Once baked, remove the cake pan from the water bath and let it cool to room temperature for a while.

8. Once cooled, carefully unmold the pudding onto a serving plate. When serving, pour the golden sesame sauce over each portion of pudding.
