SHIITAKE

Shiitake is a type of mushroom mainly cultivated in Japan, China and Korea. This variety of mushroom grows on the stump of “shii” oak tree, more specifically in southern Japan, where the hot and humid climate and heavily forested woodlands are conducive to cultivate the mushroom. Rich in guanylic acid, shiitake is one of the 3 most umami-rich ingredients in Japanese cuisine with dried bonito and kombu seaweed. It is prized for its woody scent and its pleasant texture in the mouth.
