For over 50 years, Tahara Shunichi has been sharpening and assembling knives hand-forged by craftsmen in Sakai, Osaka, a historic city of knife manufacturing. A master of traditional craftsmanship recognized by the Japanese government and Osaka Prefecture, his sensitivity and unique skills guide him in designing tools of exceptional quality. Secluded in his small workshop filled with machines, some of which he designed himself, Mr. Tahara sharpens alone a wide range of knives for all kinds of uses: the yanagiba with a single bevel to cut slices of sashimi without crushing the flesh, the deba to lift fish filets, the nakiri with a wide blade to slice and retrieve food, the versatile gyuto or the petty which reminds us of a European paring knife.
