Udon noodles with carbonara sauce and white miso

Ingredients for 2 servings

  • 1 pack of udon noodles
  • 1 tablespoon of white miso
  • 4 slices of guanciale or 200g of bacon bits
  • 30g of pecorino or parmesan cheese
  • 2 egg yolks
  • 1 stem of chives
  • Pepper, salt
  • Spice blend shichimi 

Directions

1. Cut the guanciale slices into pieces (if you didn’t choose bacon bits). Grate pecorino/parmesan cheese and keep one small piece for dressing. 

2. In a frying pan, brown the guanciale/bacon bits. Set aside.    

3. In a bowl, add the egg yolks and one tablespoon of white miso. Mix it well. Then add pecorino/parmesan cheese, a lot of pepper and mix well. 

4. In a pan, bring to a boil a big amount of water and cook the udon noodles into it during 3 min. Keep some cooking water and let it cool before adding it in the miso sauce to dilute it. Once cooked, drain the noodles. 

5. Wash the chives and cut into thin strips.

6. In the frying pan, off the heat, add the noodles and pour over the sauce. Stir to blend in the sauce. You can add a little bit of pasta water to dilute more the sauce.

7. Put the udon noodles in a plate, add the guanciale/bacon bits, some chives on top then sprinkle grated cheese and spice blend shichimi.
