Chicken and cabbage gyozas with ra-yu sauce

Ingredients for 50 dumplings

For the gyozas dough :
  • 500g of flour
  • 150ml of lukewarm water
  • 2 teaspoons of salt
  • cornstarch
For the stuffing  : 
  • 500g of grounded chicken
  • 1/4 of green cabbage
  • 1 tablespoon of grated ginger
  • 1 tablespoon of chopped garlic 
  • 3 tablespoons of mirin
  • 3 tablespoons of soy sauce with ginger
  • 1 teaspoon of salt
  • 3 tablespoons of sesame oil
  • shiitake mushrooms
  • 5 sprigs of chopped spring onion

Ra-yu hot sauce :


1 cup of water and a little bit of sesame oil for cooking 

Instructions

1. Prepare the gyoza dough by mixing all the ingredients in a large bowl. Knead the dough until the consistency becomes homogeneous and soft. Cover the bowl with a dish towel and let the dough rest at room temperature for an hour.

2. Meanwhile, prepare all the ingredients for the stuffing by cutting and chopping them. Put the chopped cabbage in a large bowl and let it soak with salt for 15 min. Rehydrate the shiitake mushrooms by putting them in lukewarm water for 10 min.

3. In another large bowl, mix all the other ingredients together, including the sauces. Remove the extra water from the cabbage by pressing it, and put it with all the ingredients. Cut the mushrooms into small pieces and add them to the mixture. Mix well and put aside.

4. Divide the dough into two balls, and shape each ball into a long roll. 

5. Cut each roll into small pieces that weight around 20g. Dust your table with cornstarch, and press each small piece flat with the palm of your hand. 

6Using a rolling pin, make each flat piece round while rotating to flatten them evenly.

7. Put one teaspoon of filling at the center of each piece of dough. With your finger, spread a little water near the edges.

8. Fold the gyozas according to your preference. Uusally, the dough is fold in two in order to create a half-moon shape, then seal by making small folds. 
9. Heat some sesame oil in a pan with a lid. Cook the bottom part of the gyozas until brown. Then add a cup of water to the pan, and cover it quickly with the lid.

10Wait until the gyozas wrappers look clear. Add more oil and cook on high heat for 1 minute.

11. For the sauce, mix everything together. Dip the cooked gyozas in the sauce and eat.
