Description : Shochu is a distilled alcohol generally obtained from rice, sweet potatoes or barley. This shochu, from Ishikawa prefecture, is the only one distilled from kaga-maruimo, a type of yam. This tuber, resembling a large potato with black skin, originates from the town of Nomi. It is highly prized for its sticky texture and high nutritional value. Besides, the brewing water used for this shochu is top-quality well water, sourced from the water tables of the Hakusan mountain range. While shochu is traditionally made from white koji, this shochu is fermented with black koji, which has a richer taste.

Flavor : This shochu is characterized by its mild aroma and refined taste.

Pairings : Shochu goes very well with Japanese, Western and Chinese cuisine. You can enjoy your shochu neat or on the rocks, but we recommend drinking it with a little hot water to appreciate the full aroma of kaga-maruimo.

Miyamoto Brewery, located in Hokuriku, Ishikawa Prefecture, was founded in 1876 and produces Japanese sake. Ishikawa Prefecture is still steeped in the Kaga Hyakumangoku culture that flourished in the Edo period, and continues to pass on excellent craftsmanship and traditional culture. Managed by a couple, Miyamoto Brewery is the only brewery in the prefecture to produce shochu, a Japanese spirit made from potatoes, barley, buckwheat or kabocha.
