Description : This traditional umeshu is made with barley shochu and plums from the Wakayama region. The plums are immersed in the long-aged shochu. Shochu is a distilled alcohol generally obtained from rice, sweet potatoes or barley, as is the case with this umeshu. This spirit reflects the craftsmanship of a Noto peninsula brewmaster, coupled with gold leaf work, a real tradition of the region.

Flavor : A sweet, fruity flavor, enhanced by the smoothness of the shochu.
Pairing : Ideal for an aperitif, he goes very well with acidity, bitterness and umami flavors, spices, eggs and dried/smoked ingredients. You can enjoy it in a cocktail, with a cheese platter and dried fruits (almond, dried apricot, hazelnut, walnut, pine nuts…), a cherry tart, a peach melba, a cheesecake or a chocolate fudge cake.
Serving temperature : This umeshu can be enjoyed cold (10-12°) but also at room temperature (17-20°) and why not warm (47-50°).
