Chocolate, iyokan peel and rice arare muffins

Ingredients for 12 muffins

  • 175g of unsalted butter
  • 100g of candied iyokan peels
  • 250ml of semi-skimmed milk
  • 400g of flour
  • 100g of dark chocolate
  • 3 mandarin oranges
  • 250g of icing sugar
  • 75g of sensoto brown sugar
  • 1 bowl of arare
  • 4 teaspoons of baking powder
  • 1 teaspoon of salt

Preparation

1. Preheat the oven to 200°C. In a mixing bowl, mix the flour, brown sugar, baking powder and salt together.

2. Dice the butter and combine it to the dry ingredients. Mash the butter with a fork and then by hand to obtain a sand-like dough.

3. Gradually add the milk to the batter. Mix until obtaining thick and smooth batter.

4. Crush the chocolate. Crush it to a reasonable size, to keep some texture. Cut the iyokan peels and combine to the batter.

5. Oil or butter the muffin molds. Add flour and fill each mold three-quarters full. Bake for 20 to 25 minutes.

6. To make the icing, mix the juice of 3 mandarin oranges to approximately 200g of icing sugar for a syrupy consistency. Add arare rice crackers for a crunchy texture.

7. Dip the top of the muffins in the icing and allow to set at room temperature.
