Description: This soy sauce is an amakuchi one. In other words, a sweeter soy sauce. It is made from whole soy beans, cultivated in Kyushu, and akazake, a traditional sake from Kumamoto. Its sweet taste also comes from the thin sugar called wasanbon that has been added.
Flavor: It has a long, umami and sweet flavor, perfect for those who look for a soy sauce closer to the Occidental ones.
Use: This sweet taste goes particularly well with meat. For example with a steak or a Japanese fondue like a sukiyaki. Of course, it will also perfectly accompany sashimis or roasted scallops.

The Okubo family that produces the transparent soy sauce is located in Kumamoto since the 17th century, even before the construction of the Kumamoto Castle. At first, it was producing sake and especially akazake, the traditional sake of the region. You can find akazake in their Heisei soy sauce. In the same time, they started a currency exchange business. In 1869, the 11th generation of the family reoriented the family business in soy sauce under the brand Fundodai. In 2019, they celebrated their 150 anniversary ! Proud of its history, the coat of arms with the "dai" character of the Okubo family traces its history: firstly, the first character of the Okubo name, but also a reference to its former currency exchange business and finally, the characteristic symbol of the old scales. Fundodai stands out for its aesthetic innovation.
