Description : This rice syrup, called Komeame, is a natural sweetener made from local organic rice and barley, with no added sugar or preservatives. It is produced in Kanazawa by saccharifying rice starch with barley malt enzymes. This rice syrup contains maltose, which is sweeter than sucrose. It was used as a substitute for sugar when the latter was rarely used in Japan. Even today, it is a popular ingredient for cooking tsukudani, stewed dishes and Japanese sweets.

Use : As a substitute for sugar in cooking, organic rice syrup can be used to make confectionery or to replace mirin by adding a sweet touch to your savory preparations. Its liquid texture, similar to honey, allows you to spread it on bread and enjoy it as it is, or to sweeten tea or other hot drinks. You can also make teriyaki sauces by mixing the syrup with soy sauce. Rice syrup gives a lovely glaze to your meat and fish dishes, and goes perfectly with lotus root, sweet potato or pumpkin. It is the ideal ingredient for sweet and savory recipes, or for hot drinks by adding a little citrus juice and hot water!

Its main crops are rice, barley, wheat, buckwheat, vegetables and fruit, grown organically on abandoned farmland. The processed products it sells are all made with food grown locally on the farm, enhancing both the close relationship with producers and their work.
