Description : The olives used to make this oil are cultivated in Setouchi area, which has an ideal climate to cultivate olives, and are hand harvested one by one before they reach ripeness. In order to avoid any quality and freshness loss, olives are pressed within the 4 hours following their harvest. This high quality oil has an emerald green color and is made with only 3% of harvested olives.

Flavor : It is an olive oil with a neat and powerful flavor that reminds of the aroma of freshly cut grass.

Use : This olive oil goes especially well with Japanese cuisine. Mix this oil with soy sauce and salt to season sashimi or a bowl of rice and raw egg or enjoy it on its own with shio kombu on cold tofu. Use it on a burrata or a fish fillet for example. It is better used as a seasoning oil rather than cooking oil.
