Description : It is a sake easy to drink with a pure taste. It is produced by a brewer established in Saga since 1688. It is a karakuchi sake, in other words a dry sake, which is quite unusual in this region. This sake is perfect to discover Japanese sakes.
Alcohol by volume : 15,5%
Appearance : This sake is very clear with no color.
Nose : The first nose is quite powerful with cereals and cocoa aromas. There is also some mushroom flavors. The second nose has pear notes but very fast we go back to cereals (cooked rice, puffed rice). There is a warm and acidulous side. We can feel a wide alcohol presence but it’s not something bad.
Mouth : The first impression in the mouth is fresh. We can feel a slight sweetness but it remains a dry sake. It has a great vivacity and a mellow texture like water. We can appreciate some fruits notes and mainly rice, green hazelnut, ripe apple and mushroom aromas. Some spices flavors are appearing as well.
Finish : The finish has rice and ripe apple aroma, really clear.
Pairing : It goes especially well with acid, bitter and umami flavors as well as spices, iodine, eggs, dried and smoked products. Enjoy it with a quiche lorraine and its green salad and vinaigrette, a grilled trout or red mullet with lime or even chocolate mendiants with dried fruits and ginger. It is perfect to accompany fried dishes, Korean BBQ or ginger chicken rice.
Serving temperature : This sake has a spicy and dry profile. It is perfect cold (10-12°), at room temperature (17-20°) but especially warm (47-50°).
Ingredients : Rice (30%), Koji (10%), Alcohol (5%), Water (55%)
Preservation : Store in a cool, dark and dry place.
